This is a great healthy meal to add to your weekly menu plan when avocados and mangoes are on sale!
Taffi's Avocado Mango Salad
2 Mangoes (medium dice)
1 Large Avocado (medium dice)
2 Medium Tomatoes (diced)
¼ Red Onion (minced)
4 Sprigs cilantro (stems removed, leaves torn into small pieces)
Juice of ½ Lime (or more to taste)
Mix all of the ingredients together and then put the salad into the refrigerator for about half an hour to let the flavors develop.
This salad is very refreshing, and the flavors work so well together. It's one of my favorite light meals!
Makes 3 large servings, with about 215 calories per serving.
